
Frozen Blueberry Yogurt Bites
Ingredients
Servings = 12 bites

1 pint organic blueberries

1 cup vanilla full-fat Greek or coconut yogurt, unsweetened

1 tsp vanilla extract

1/4 cup slivered almonds
-
1/4 cup shredded coconut
-
1/4 cup chia or basil seeds

1 cup dark chocolate chips, unsweetened

2 tbsp coconut oil
Recipe

Line a baking sheet with parchment paper.

Place blueberries, yogurt, almonds, coconut, chia or basil seeds, and vanilla extract in a bowl. Stir to combine.

Using a spoon, scoop 12 clusters onto the baking sheet. Freeze for 30 minutes.

Place chocolate chips and coconut oil in a microwave-safe bowl or in a small pot on the stove and melt. Start with 30 seconds and then stir to combine before adding more time.

Using two forks, dip each frozen cluster in the chocolate. Cover all sides.

Place back on the baking sheet and freeze again for 5-10 minutes.

Allow the bites to sit at room temperature for 2-3 minutes before enjoying.

Store leftovers in an airtight glass Tupperware in the freezer.
Tips

Fresh blueberries work best, but you could use frozen as well. We recommend defrosting and draining excess liquid if using.

If you can find unsweetened vanilla yogurt, we highly recommend it in this recipe.
