
Viral Feta & Chicken Bake
Ingredients

8 oz feta cheese

1/4 cup olive oil

2 cups broccoli florets

1 cup cherry tomatoes

1 1/2 lbs whole boneless chicken breasts

2 cups cauliflower rice
-
1/2 cup fresh basil leaves

2 tsp salt
-
1 tsp black pepper

1 tbsp garlic powder
Recipe

Preheat oven to 400°F.

In a large casserole dish, add your feta, olive oil (reserving 1 tbsp), tomatoes, broccoli, and chicken. Space the chicken evenly and place the feta in the middle.

Season everything with salt, pepper, and garlic powder.

Bake uncovered for 30 minutes or until the internal temperature of the chicken reaches 165°F.

In the meantime, cook the cauliflower rice. Sauté in a large skillet over medium heat in 1 tbsp olive oil. Cook for a total of 5-8 minutes, stirring occasionally.

Take the tomato-feta bake out of the oven and remove the chicken from the dish. Place chicken on a cutting board to slice or shred.

Mix the warm feta, broccoli, and tomatoes together until well combined. Once combined, add the basil and cauliflower rice.

Add chicken back to the dish and top with extra olive oil, salt, and basil if desired.
Tips:

Fresh or frozen veggies work equally well in this recipe

We prefer a block of Feta cheese but crumbled will also work. Place the 8 oz of crumbles in the center of the dish, just as you would for a block.
