Viral Feta & Chicken Bake

Ingredients

Servings = 4

  • 8 oz feta cheese

  • 1/4 cup olive oil

  • 2 cups broccoli florets

  • 1 cup cherry tomatoes

  • 1 1/2 lbs whole boneless chicken breasts

  • 2 cups cauliflower rice

  • 1/2 cup fresh basil leaves

  • 2 tsp salt

  • 1 tsp black pepper

  • 1 tbsp garlic powder

Recipe

  • Preheat oven to 400°F.

  • In a large casserole dish, add your feta, olive oil (reserving 1 tbsp), tomatoes, broccoli, and chicken. Space the chicken evenly and place the feta in the middle.

  • Season everything with salt, pepper, and garlic powder.

  • Bake uncovered for 30 minutes or until the internal temperature of the chicken reaches 165°F.

  • In the meantime, cook the cauliflower rice. Sauté in a large skillet over medium heat in 1 tbsp olive oil. Cook for a total of 5-8 minutes, stirring occasionally.

  • Take the tomato-feta bake out of the oven and remove the chicken from the dish. Place chicken on a cutting board to slice or shred.

  • Mix the warm feta, broccoli, and tomatoes together until well combined. Once combined, add the basil and cauliflower rice.

  • Add chicken back to the dish and top with extra olive oil, salt, and basil if desired.

Tips:

  • Fresh or frozen veggies work equally well in this recipe

  • We prefer a block of Feta cheese but crumbled will also work. Place the 8 oz of crumbles in the center of the dish, just as you would for a block.
